LOL<br /><br />Here is the recipe: <br /><br />Ginger Ice Box Cupcakes<br /><br />These easy no-bake Ginger Icebox Cupcakes are perfect for any holiday party!<br /><br />Ingredients:<br />Large Container of Cool Whip<br />1/8 teaspoon ground cinnamon<br />1/8 teaspoon ground nutmeg<br />Any type of Ginger Snaps type cookies<br />Sprinkles, optional<br />Directions:<br />1. First mix the ground cinnamon and nutmeg into the Cool whip. <br />2. To assemble the cupcakes, place a ginger snap into a cupcake liner and spread about 1 tablespoon of the Cool whip on top of a ginger snap. Place another ginger snap on top of the Cool whip to make a sandwich. Spread more Coolwhip over the cookie and add another cookie. Top the final ginger snap with Cool whip. You want to use four cookies per cupcake and end with Coolwhip.<br />3. Stick in the refrigerator for at least 2 hours. You can refrigerate them overnight. The whipped cream will soften the ginger snaps making them soft like cake.<br />4. ½ cup soft butter/margarin...Soft Molasses Cookies <br /><br />½ cup soft butter/margarine (1 stick)<br />½ cup vegetable shortening<br />1½ cup sugar<br />Mix together until light and fluffy (use mixer)<br />½ cup molasses (spray with Pam in measuring cup for easy release)<br />2 eggs (lightly beaten)<br />Beat into creamed mixture (use mixer)<br />4 cups all purpose flour<br />½ teaspoon salt<br />2¼ teaspoon baking soda<br />2¼ teaspoon ginger<br />1½ teaspoon clover<br />1½ teaspoon cinnamon<br />Mix all dry ingredients together into a separate bowl and then blend with moist mixture until well blended (Kitchen Aid mixer is handy!)<br />Roll dough into 1½" balls, dip tops in sugar (I gently shake in a bowl with sugar) and place on greased cookie sheet 2" apart (they will flatten out.) Note: I use a ball scoop to make my ball and then roll them in my hand to make them round, but the scoop helps keep them even in size.<br />Bake at 350º for 11 minutes. DO NOT OVER BAKE!<br />After completely cooled (several hours) store in tightly sealed container.
